Why Instant Coffee Sucks (And What You Should Be Drinking Instead)

Let us be honest. Instant coffee is one of the great con jobs in the history of food and drink. It is sold to us as convenience, as a perfectly acceptable substitute for the real thing, and millions of people drink it every single day without ever questioning what they are actually putting in their cup. This article is here to change that.
We are going to get into the weeds. We are going to look at what instant coffee actually is, how it is made, what happens to it along the way, and why it bears almost no resemblance to the fresh specialty coffee that a growing number of people are discovering and falling in love with. By the end, you will understand exactly why your morning jar of granules is letting you down, and what you can do about it.
What Is Instant Coffee, Really?
Instant coffee is brewed coffee that has been dehydrated into a powder or granule form so that it dissolves in hot water. That sounds simple enough, but the process of getting from a coffee bean to a jar of brown powder involves a level of industrial intervention that would make most coffee lovers weep.
There are two main methods used to produce instant coffee at scale: spray drying and freeze drying.
Spray Drying
Spray drying is the cheaper and more common method. Brewed coffee concentrate is pumped into a large chamber and sprayed through a nozzle as a fine mist. Hot air at temperatures of around 250 degrees Celsius blasts through the chamber, evaporating the water almost instantly and leaving behind tiny dry particles that fall to the bottom and are collected as powder.
The problem is that heat is the enemy of coffee flavour. The volatile aromatic compounds that give coffee its complexity, its brightness, its floral or fruity or chocolatey notes, are extremely sensitive to temperature. At 250 degrees, most of them are simply destroyed. What you are left with is a shelf stable powder that tastes like a vague approximation of coffee, stripped of almost everything that made it interesting in the first place.
Freeze Drying
Freeze drying is more expensive and produces a slightly better result, which is why it tends to be used for premium instant coffee products. The brewed concentrate is frozen into a solid, then placed in a vacuum chamber where the ice sublimates directly into vapour without passing through a liquid stage. This lower temperature process preserves slightly more of the aromatic compounds than spray drying.
Slightly more. Not much. The end result is still a pale shadow of what the coffee once was, and the freeze drying process itself introduces its own off flavours and textural issues. The granules you see in a jar of premium instant coffee are essentially coffee flavoured ice crystals that have had the water removed. They are not coffee in any meaningful sense that a specialty roaster would recognise.
The Raw Material Problem
Here is something the instant coffee industry does not advertise: the beans used to make most instant coffee are not the good ones.
The global coffee market is broadly divided into two species: Arabica and Robusta. Arabica is the variety prized by specialty roasters for its complexity, sweetness, and wide range of flavour profiles. Robusta, as the name suggests, is hardier, higher yielding, and significantly cheaper to produce. It also contains roughly twice the caffeine of Arabica, which sounds appealing until you learn that caffeine is bitter, and Robusta tastes accordingly: harsh, rubbery, and flat.
The majority of instant coffee is made predominantly from Robusta beans, often sourced from the lowest grade harvests. These are beans that would not pass muster for any self respecting roaster. They are overripe, underripe, damaged, or simply undistinguished. In the world of specialty coffee, beans are graded on a 100 point scale and anything below 80 is considered commercial grade. Most instant coffee is built on beans that would score in the 60s, if they were scored at all.
The industrial roasting process compounds this further. Beans destined for instant production are typically roasted at very high temperatures for very short periods, a process optimised for throughput rather than flavour development. The nuanced Maillard reactions and caramelisation that a skilled roaster coaxes out of a quality bean over a carefully controlled 10 to 15 minute roast are simply not part of the equation.
The Chemistry of What You Are Losing
Fresh coffee is extraordinarily complex. A single cup contains over 1,000 distinct chemical compounds, many of which contribute to its aroma and flavour. These include aldehydes, ketones, esters, furans, pyrazines, and a host of other volatile organic compounds that interact with your nose and palate to create the experience of drinking coffee.
The moment coffee is roasted, a clock starts ticking. These volatile compounds begin to off gas and degrade. Ground coffee loses a significant portion of its aromatic complexity within minutes of being ground. Brewed coffee begins to stale within hours. This is why freshness matters so profoundly to specialty coffee drinkers.
Now consider what happens to instant coffee. The beans are roasted, often aggressively. They are then ground and brewed into a concentrate. That concentrate is then subjected to either extreme heat or a freeze drying process. It is then packaged, shipped, warehoused, and sits on a supermarket shelf for months before you buy it. By the time you add hot water to those granules, the aromatic compounds that once existed in those beans are long gone. What remains are the more stable, less interesting compounds: bitterness, some body, a generalised coffee smell that is more memory than reality.
Studies have shown that instant coffee contains significantly lower levels of beneficial antioxidants and chlorogenic acids compared to freshly brewed coffee, though it does retain some. More relevantly for flavour, the concentration of desirable volatile aromatics in instant coffee is a fraction of what you find in a freshly brewed cup from quality beans.
Specialty Coffee: A Different World Entirely
Specialty coffee operates on an entirely different set of principles. The Specialty Coffee Association defines specialty grade coffee as beans that score 80 points or above on a 100 point scale when evaluated by a trained Q Grader. These are coffees that have been grown at specific altitudes, harvested at peak ripeness, processed with care, and roasted to highlight their individual character rather than to produce a standardised commodity flavour.
When you buy a bag of freshly roasted specialty coffee, you are buying something with a traceable origin. You might know the farm, the region, the variety of Arabica plant, the processing method (washed, natural, honey), and the harvest date. The roaster will have profiled the bean carefully, adjusting temperature curves during the roast to develop sweetness, preserve acidity, and bring out the specific flavour notes that make that coffee distinctive.
A washed Ethiopian Yirgacheffe might taste of jasmine, bergamot, and lemon curd. A natural processed Brazilian might offer notes of dark chocolate, hazelnut, and dried cherry. A Colombian from the Huila region might be all red apple, caramel, and brown sugar. These are not marketing fictions. They are the genuine result of terroir, careful farming, skilled processing, and attentive roasting.
None of this exists in instant coffee. It cannot. The process destroys it.
The Convenience Argument Does Not Hold Up
The most common defence of instant coffee is convenience. It is quick, it is easy, it requires no equipment. And look, we understand the appeal. But the convenience gap between instant coffee and a genuinely good cup of fresh coffee has narrowed dramatically in recent years.
A cafetiere requires boiling water, two minutes of steeping, and a press. Total active time: about 90 seconds. An Aeropress is similarly fast and produces a remarkably clean, rich cup. Even a simple pour over with a paper filter takes only a few minutes from start to finish. The difference in the cup is not marginal. It is transformative.
If you are using quality freshly roasted beans, ground just before brewing, the cup you produce in those few minutes will be categorically different from anything that comes out of a jar. It will have aroma, complexity, sweetness, and a finish that lingers pleasantly rather than leaving a flat, slightly bitter aftertaste.
The Cost Myth
Another common assumption is that specialty coffee is expensive. On a per cup basis, this is largely a myth. A quality bag of specialty coffee, properly stored and used at the right dose, typically works out at somewhere between 20p and 50p per cup depending on the coffee and your brewing method. A jar of branded instant coffee, when you do the maths on cost per cup, is often not as cheap as people assume, and the value you are getting for that money is considerably lower.
You are paying for shelf life, for marketing, for the infrastructure of industrial coffee production. You are not paying for flavour, for craft, or for the work of the farmers and roasters who actually care about what ends up in your cup.
What the Industry Does Not Want You to Know
The big instant coffee brands spend enormous sums on advertising designed to associate their products with warmth, comfort, and quality. The imagery is always the same: a steaming mug, a cosy morning, a suggestion of something artisanal. The reality of the product inside the jar could not be further from those associations.
The instant coffee market is dominated by a handful of multinational corporations who source commodity grade beans on futures markets, process them at industrial scale, and sell the result at significant margin. The coffee farmer at the beginning of that chain typically receives a tiny fraction of the retail price. The specialty coffee model, by contrast, tends to involve direct trade relationships, higher prices paid to farmers, and a genuine incentive to produce exceptional quality because quality is what the market rewards.
When you buy instant coffee, you are opting into a system that prioritises volume and shelf life over flavour and fairness. When you buy specialty coffee from a roaster who cares about their supply chain, you are doing the opposite.
Making the Switch
If you have been drinking instant coffee out of habit or convenience, making the switch to fresh specialty coffee does not have to be complicated or expensive. Start with a cafetiere and a bag of freshly roasted beans from a roaster you trust. Grind them just before brewing if you can, even a basic hand grinder makes a significant difference. Use water that is just off the boil, around 93 to 96 degrees Celsius, and give it the time it needs.
The first cup you make from quality fresh beans will tell you everything you need to know. The aroma alone, before you even take a sip, will be more complex and more alive than anything you have experienced from a jar. That is not hyperbole. That is just chemistry.
Instant coffee had its moment. It served a purpose in a world where fresh coffee was harder to come by and brewing equipment was less accessible. That world no longer exists. There is no good reason to keep settling for a dehydrated, industrially processed, flavour stripped substitute when the real thing is this accessible, this affordable, and this much better.
