Our Story
In August 2023, with a heart full of passion for both coffee and creativity, coffee enthusiast Robert Bradley founded The Last Unicorn Coffee Company. Rob's dream was to create a coffee experience that would push the boundaries of taste while transporting coffee lovers to realms of pure creativity and inspiration.
For years, Rob had been captivated by the artistry of coffee. As a dedicated storyteller and entrepreneur, he saw coffee not just as a drink but as an experience—a ritual that fuels creativity, conversation, and connection. He wanted to craft something unique, something that blended rich flavour with an immersive, imaginative brand. And so, The Last Unicorn Coffee Company was born, named after the sense of magic and rarity that he wanted every cup of coffee to evoke.
From Concept to Creation
Rob didn’t just want to sell coffee—he wanted to roast it himself. He invested in a Kaleido M10 coffee roaster, a machine that allowed him to fine-tune the roasting process to perfection. The journey into roasting was one of deep experimentation, exploring bean temperature, environmental conditions, and rate of rise (RoR) to develop unique roast profiles. His approach was hands-on, treating each batch like an alchemical process, where subtle tweaks in fire, smoke, and airflow could unlock hidden depths of flavour.
He sourced high-quality beans from ethical suppliers, ensuring that each cup of Last Unicorn Coffee was not only delicious but also rooted in sustainability. His focus was on small-batch roasting, allowing for careful craftsmanship and consistency. Every roast was designed to tell a story—whether it was a bold espresso blend that evoked the thrill of adventure or a smooth, mellow single-origin coffee reminiscent of a quiet morning in a fantasy novel.
Taking the Leap into the Coffee Business
Like any new venture, The Last Unicorn Coffee Company faced its challenges. Rob started selling his coffee at local farmers' markets, engaging with customers face-to-face and sharing his passion for the craft. The response was overwhelmingly positive, and the brand quickly developed a loyal following.
Encouraged by this early success, Rob set his sights on expanding beyond farmers' markets. He designed a unique, personal brand around his coffee, incorporating elements of fantasy storytelling and a connection to the creative community. His coffee wasn't just for caffeine lovers—it was for artists, writers, dreamers, and adventurers. The Last Unicorn Coffee Company became a brand that inspired.
Growth and the Future
As demand grew, Rob explored different avenues to expand the business. He began offering local delivery, personally dropping off bags of fresh coffee to customers in his community. He also sought ways to get his coffee into cafés, competing with larger roasters while maintaining the handcrafted quality that set him apart.
Despite the challenges of standing out in a crowded market, Rob remains committed to growing The Last Unicorn Coffee Company in a way that stays true to his vision. He continues to refine his roasts, expand his customer base, and dream of the day when Last Unicorn Coffee will be known far and wide as the drink of choice for those who believe in magic, adventure, and the power of a perfect cup of coffee.
